Halloween is almost here and I’m trying to squeeze in the last of my themed desserts while I can before moving on to Thanksgiving goodness and then… CHRISTMAS!!! Anyway… this past week has been nothing but a dessert failure for me; it began with a cheesecake venture that started out as miniature cheesecakes with a surprise inside (I’m not going to say what the surprise is as hopefully a better result will be up on the blog at some point this week) but somehow morphed into cheesecake squish balls dipped in chocolate ganache – how much further away from individual cheesecakes topped with chocolate ganache could you get? I know. Then… came the cake balls. Oh yes, the cake balls. Do ever get one idea that just seems to keep changing into another? That happens to me a lot. Anyway, this was one of those things. It started out as an idea to make a cake that consisted purely of cake balls but then when looking up the idea to see if that sort of thing even existed, so I would know how on earth to cut/serve/eat it, I couldn’t find anything but cakes wrapped in cake balls.
Now, I could have started a new thing and how would we get some of the amazing desserts we have had people not been daring enough to try something new, maybe something that even sounded crazy – but I’m not that daring, not yet at any rate (probably because I know what sounds crazy to me probably will turn out crazy!). So then I nixed that idea and decided to go the more simple and unoriginal route and make plain cake balls but did it stop there? No. Me being the glutton for punishment and a lot of time consuming work that I am, decided “why not insert chocolate dipped pretzel rods in the cake balls”? Ha. Ha. To make a long story short, in the end my cake ball mixture was a bit mushy (it’s been a few years since I last made cake balls) and the pretzel rods when inserted looked kind of funny. SO… I had decided to try making them again (the cake balls, that is) with a few changes but then at the last minute before heading into the store, I had an idea to make monster cookie dough truffles. I mean, I love monster cookies and of course I love eating the dough, so how much more fitting for Halloween (and easy, thank goodness!) could you get than making monster cookie dough truffles that look like monster eyeballs?
These things are awesome, they taste like the real right out of the bowl and off the beaters deal even though they have less ingredients and are not time consuming at all to make. These are perfect for parties as not only are they cute, but perfect for snacking and YOU CAN MAKE THEM AHEAD OF TIME!!!
The lowdown: Monster Monster Cookie Dough Truffles that not only taste like monster cookie dough right out of the mixing bowl, but look like little monster eyeballs! The truffles consist of a chocolate and M&M coating on the outside and a cookie dough truffle filled with peanut butter, mini chocolate chips, mini M&M’s and oats on the inside – so tasty, fun, and addicting!
- 3/4 C. brown sugar
- 1/4 C. creamy peanutbutter
- 1 C. all purpose flour
- 1/4 tsp. kosher salt
- ½ C. mini chocolate chips
- ½ C. mini M&M's
- ¼ – 1/3 C. depending on how many oats you like in your dough quick oats
- Mega M&M's
- 1 oz probably even less, see picture in post semi sweet (or milk or dark, it doesn't really matter) chocolate
In a mixing bowl, beat the butter, brown sugar, and peanut butter until creamy.
Add flour and salt.
Fold in the mini chocolate chips, M&M's, and oats.
Using a scoop that measures one tablespoon (or an actual tablespoon), drop balls onto a parchment paper lined baking sheet and freeze for two hours.
Before removing the truffles from the freezer, melt white chocolate.
Using a fork, dip each frozen truffle into melted chocolate tapping the side of bowl to remove excess chocolate. Place one mega M&M on wet chocolate(pretty much immediately). Repeat until all truffles have been coated.
Before the next step, if the truffles are becoming hard too work with, pop back in the freezer to quickly firm them up again.
In a small bowl, melt semi sweet chocolate.
Using a toothpick, paint a little dot onto the Mega M&M's with chocolate, to create the pupil.
Allow to set, about 10 minutes. Store in an airtight container in the refrigerator for up to two weeks.
Yields: 2 dozen
Feel free to add some red gel on the truffles for a bloodshot eye effect - I just didn't want to go through the trouble! :)
This yields smallish truffles so if you want larger ones I would double the recipe.
For the white chocolate I would highly recommend using one especially for melting purposes. I tried using chocolate chips and they didn't work as well - I also used Baker's chocolate which worked very well.
These don't just have to be Halloween themed - they would be great any time of the year (and maybe coated in a different chocolate)!
